Homemade Healing Broth

While I really love fruit and veggie juices for skin healing, homemade broths can be a warm and comforting option for skin health as well.
Broths are healing for the gut, and the healthier your gut is, the prettier your skin will be. Broths are easily digested and filled with minerals and vitamins that your body needs to thrive. This combination of qualities - easily digested and nutrient dense - make broth a wonderful addition to your diet when you are healing your skin from the inside out.
I am plant-powered. So my recipe will be for a nourishing veggie take on bone broth. Add your kitchen produce scraps in with water and some herbs and let it simmer for a while. It’s really so easy to do and helps cut down on produce waste. I love adding mushrooms and seaweed for high nutrient and flavor content. Here's what I add to my broth. Yours may look a bit different and that’s wonderful too. The stars are added next to the ingredients I always use:
2-3 beets with tops
1 onion or 2 leeks*
1 package mushrooms*
big bunch kale or chard or spinach*
garlic - I added a whole head!*
3 carrots*
2 or 3 celery stalks
other veggies you want
2 bay leaves*
rosemary, thyme or oregano
1T turmeric*
1 tsp black pepper*
water*
Just rough chop everything (including skins and leaves,) then add to a stock pot and fill with water until
it covers everything. Turn on high heat, then reduce to simmer for at least 30 -40 minutes. Strain out broth
and add to large jars to drink or cook with. I make rice and soup with this broth :)
